Bacon Egg Cupcakes

These are great for breakfast or an afternoon pick me up snack!

  • Coconut oil or butter for greasing
  • 6 strips bacon
  • 6 eggs
  • crumbled feta (optional)
  • chopped chives or other herbs (optional)

Preheat oven to 400 and lightly grease a 6-cup muffin pan. Use bacon strips to line each muffin cup, looping or pressing the bacon around the sides and using any small broken bits to line the bottom. If you like your bacon crispy, place the tray in the oven for 5 minutes before continuing. Gently crack 1 egg into each bacon cup, then sprinkle with cheese and herbs if desired. Bake for 15 mins, until the egg whites are set. Let sit for a minute and then, using a knife or spoon, gently remove the “cupcakes” from the pan.

**A note from Haley: I will make an entire dozen of these. They last all week so they are a good thing to meal prep on a Sunday. I scramble my eggs before dropping them in the muffin pan and I only use salt and pepper in the eggs I do not use any cheese or herbs and they come out great. You can eat two for breakfast with some berries or avocado or have one for an afternoon snack. My dad brings these on the road with him for work and eats them cold! I am sure he eats 3 or 4 at a time (rolling my eyes) but he loves them and has lost 30 pounds since I have revamped his diet!
